First of all, let me tell you that this banana muffins are oh so moist and delicious.
Using very ripe bananas
(I use ripe bananas that I freeze for when I need them),
basically takes care of the sugar in the recipe.
Yep, that's right.
I only used 2T of sugar for this recipe that makes 12 muffins.
And the muffins are
yummy.
Promise.
Ingredients
4 very ripe bananas mashed
1
egg
2T sugar
(you could use more if you like them REALLY sweet but the
bananas are sweet enough)
⅓ c butter, melted
1½
c whole wheat flour
1
t baking powder
1
t baking soda
½
t salt
Instructions
Preheat
oven to 350F
Mash
bananas and add the egg, sugar and butter.
Mix
well to combine.
Then add the flour, baking soda, baking powder and salt and
mix well.
Add nuts or chocolate or whatever add-ins you want.
I used chocolate chunks.
Bake for 25-30 minutes,
until done.
Stay Frugal,
and Merry Christmas to all.

Dani,
YUM!!!! I am going to try these. I love banana muffins or bread. I may put blueberries instead of chocolate in mine. These looks and sound delish!!!!

Dearest Daniela,
Using ripe bananas is a lot healthier than using any refined sugar.
Great recipe!
Merry Christmas to you and dream about Christmas 2014 with your new deck and all...
