Meat(berry)loaf

On my continuous quest of "healthify" our meals, I made this hybrid.
A meat and wheat berry meatloaf...hence the name meat(berry)loaf.
The whole gang LOVED it!
It was delicious.
I basically made my meatloaf recipe, but substitute half
meat with the equivalent in wheat berries.

Here it is.

Ingredients
1lb ground meat (I used beef)
2c cooked wheat berries
(how to cook wheat berries)
1 onion
1/4c Ketchup
2 eggs

Direction
Mix meat, berries and eggs together .
--I only had 1 egg...but 2 will work best to keep the meat(berry)loaf from crumbling--
Add onion and ketchup
put in a 8x8 baking dish
 cook at 375 for 1 hour

I made baked steak fries and green salad to go with this.
Enjoy your delicious meal!

Good Morning Daniela, We enjoy meatloaf in my household. I have never heard of wheat berries, they look a little like pearl barley. I should imagine the wheat berries give a nice chewy texture to the meatloaf. I love your oven baked chips, very healthy. I love oven steak fries with meatloaf! Next time I go to a store with wheat berries, I'll get some and try them.
