Grandma Apple Cake

Grandma apple cake, aka Torta di mele della Nonna.
It seems that back then, recipes were simple, easier and better tasting.
This is my favorite apple cake recipe.


***NOTE***
The best way to make this cake is to take 3 coffee mugs, add
3-4 eggs in one mug, depending how big of a cake you want. Then to the other two mugs add equal amount of sugar to one mug, and equal amount of flour to the third mug so you will have three mugs with equal amounts of eggs, sugar and flour.

Ingredients:
3-4 eggs= 1 mug of eggs
1 mug of sugar 
1 mug of flour (I used whole wheat)
2 big apples + 1/2 cup apple sauce
3 teaspoons baking powder 
cinnamon (optional) 
powder sugar before serving

Preheat over to 350F.
 Mix eggs and sugar in a bowl and beat with an electric mixer until white and fluffy. 
Add flour, baking powder, cinnamon, apple sauce and mix well. 
Grease a round cake pan and add flour to the pan to prevent the cake sticking. 
Core, slice and peel the apples . 
Pour the cake batter into the pan and arrange the apple slices on the top. 

Bake for about 45 minutes or until golden brown on the top. Depending on oven.
Dust the cake with powder sugar before serving.

And yes, there is no oil/butter in this cake.

Such an apple cake was a labor of love by our Grandmas and our Mothers. My Mom loved to bake for her family; fondest memories.
