Pizza rolls

When Mexican and Italian meet!
Actually we have something in Italy (from the region I am from) that is very similar to a tortilla.
It's called piadina romagnola, because the Italian region where the piadina is from is called Emilia Romagna.

For those of you that are connoisseurs, Emilia Romagna is also the same region where
Parmesan cheese (Parmigiano Reggiano
and the Prosciutto San Daniele are from.

***End of rabbit trail***

So here is what I used for a quick appetizer/snack idea.
The ingredients are simple.
And the process is simple too.
before adding the pepperoni I put the tortilla with sauce and mozzarella in the microwave for 15 sec.
Roll it up
and slice in 4-5 pieces.
I usually also serve it warm.

Stay Frugal,
