Wheat berries Chili

This is not your meat and beans kind of chili, but when you taste it, it will make you come back for more!
I do have to say that we are meat eaters...but we just don't eat it as much as the majority of people.
This chili has no meat, which has been replaced with cooked wheat berries.
By wheat berries I mean either hard white wheat or hard red wheat (which has more of a "nutty" flavor)
The wheat berries have a "chewy" texture, which works well when replacing meat in recipes.

So here is the recipe
I use


Ingredients

3T olive oil

1onion, chopped

1 bell pepper,chopped

2 cloves garlic, minced

2 tsp chili powder

1 1/2 tsp ground cumin

1 tsp dried oregano

2 15oz cans beans

2 14oz diced tomatoes, undrained

2 cups vegetable broth

2 cups Cooked Wheat Berries


Directions
Heat oil in a tall pot over medium-high heat. 
Add onion, bell pepper, garlic, chili powder, cumin, oregano, and cook, stirring occasionally until tender, about 5 minutes.
Add wheat berries and stir. 
Finally add beans, tomatoes, and broth.

Bring to a boil over high heat, reduce heat, cover and simmer for 25 minutes.

Enjoy!

Wheat berries can be found at natural/health food stores, some regular grocery stores (look where the flour is) and online stores.

This may be a stupid question but where do you buy wheat berries?

This recipe looks like it might tempt me into trying. I love a good chilli recipe.

That looks delicious! Wish I could eat some right now. I'm on a bland diet right now, so everything looks good to me. Ha! I've never heard of wheat berries before. It does sound like a nice alternative to meat. Do they sell those at the regular grocery store?

This chili looks very good. I've not tried wheat berries as a meat substitute before (really I haven't had wheat berries at all), but I'll be willing to give them a try. I usually use meatless crumbles made by Boca for dishes like this. Thanks for adding a new version of a meatless chili to my recipe stash!
