Chunky Potato Soup

Oh how I LOVE potatoes!
I cook 'em, bake 'em, mash 'em, fry 'em...I do it all.
Today I am going to share with you my Chunky Potato Soup.
Easy to make, delicious and budget friendly, especially this time of the year.
(I just got 10lb of potatoes for $1.49)
Ingredients
12 medium potatoes (about 4-5 lb)
1/2 onion
3T of butter
3T of flour
2c of milk
red pepper flakes and salt
1c of cheddar cheese

Cube the potatoes,
put in a pot and cover with water, bring to a boil and let it cook until tender (about 15-20 minutes).
Drain the water and keep it for
later.
In a separate pot, put the onion with the butter, and let it brown slightly.
At this point add to the onion and butter, a cup of the cooking water and 3T of flour and make a rue. 
Add slowly a little more water and milk.
Add the potatoes, 
salt, red pepper flakes 
and cheese.

Add more of the cooking water and milk until you get the consistency you like. 
I like mine thick, but not as thick as mashed potatoes :)
Let it simmer for 30 minutes, stirring often (you don't want the cheese to settle on the bottom of the pot and burn)


 Get the masher and let you frustration out on
the potatoes...but still keep some potato chunkiness.
 And you are all done!
Enjoy!
If you want to add some protein, use diced ham. 
(usually after major holidays I have plenty of leftover ham that I freeze and use throughout the year in recipes like this)
Or you could add some heavy whipping cream to make it more...well, creamy!
The all family loves this soup, and for about $2 we eat 2 meals out of it.
That's about 25cents per serving!

Oh MY GOSH! MY FAMILY LOVES POTATO SOUP TOO! We put CRISPY bacon in ours and LOTS of cheese! I have fixed it 3 times already since the beginning of school. Great for leftovers too!

I've been looking and looking for a good potato soup recipe! Everyone that I try either has no flavor or turns out too thin. This one looks great!

Delicious! I love soup, especially in fall and winter, and I make it often. Potato is a favorite, sometimes with ham, or bacon, and whatever else is in the fridge or sounds good at the moment. With diced, cooked chicken and a pkg of corn, it becomes Chicken Corn Chowder. A pkg of frozen cream spinach, and it is food for the gods. Or just as you presented it, sounds wonderful, and an economical meal for a cold,hungry family!

What a great deal on those potatoes. That soup looks belly warming and hearty. And, I may have some frustration to take out on those poor potatoes so I'll have to give it a try.

I've been having soup cravings lately and one of them has been for a creamy soup such as a potato, potato/leek, or broccoli cheese soup. Now you've given me a wonderful soup to try. As soon as I have a bit of time I'm going to try this. :-)
