Tiramisu' Recipe

Hope you are all doing well, but if you need a pick me up, you are in the right place!
Tiramisu' is an Italian dessert that literally means "pick me up".
This is an easy yet yummy dessert, great for summer, since you don't have to turn the oven on!
Here is what you need to make Tiramisu'
Ingredients
3 eggs
3 T of sugar
8oz of cream cheese (or mascarpone cheese)
1/2 pint of heavy whipping cream + 1 T of sugar
1 box of savoiardi (aka lady fingers)
3 cups of American coffee or 6 shoots of espresso (I make it decaf and dilute some with hot water...so the children can enjoy it too)
cocoa powder (or shaved chocolate) for garnish

Directions
Start with making the coffee.
In 2 bowls, separate the yolks from the whites.
Add the sugar to the yolks and mix well. Then add the cream cheese. (I leave it at room temperature to soften it up a bit)
Whip the whites until fluffy (add a pinch of salt to do the trick)
Whip the heavy whipping cream
Add the heavy cream fluff to the bowl with the cream cheese and yolks cream, then gently fold in the egg whites.
Dip the savoiardi in the coffee...turn it quickly about 4 times, before they get too soggy, and make a layer with those. Then add half of the cream mixture. Repeat with another layer of savoiardi,

And finish it up with the remaining cream mixture
You will have a total of 2 layers of savoiardi dipped in coffee, and 2 layer of cream mixture.
Refrigerate until you are ready to eat.
***it is best to make the tiramisu' the day before, to give the ingredients time to soak up the flavor***

When ready to eat, sprinkle the cocoa powder (or chocolate shavings) over the top.

Serve it cold

I have added two smell and taste buttons just for this post. 


$ tip: Using cream cheese is a more economical way to make tiramisu'. Mascarpone can be very expensive ($5 for 8oz, compared to $1.50 for the cream cheese). I have used both plenty of times, and I promise you, it is super tasty either way. 
"watch your waste line tip": If you are watching your calories intake, mascarpone is very high in fat and calories (but oh so yummy!)

Finally, just so you don't act surprise, tiramisu' is made with raw eggs. (restaurants use dried egg powder, for flavor). Follow two simple rules: make sure you are using fresh refrigerated eggs, and that the inside does not touch the outer shell of the egg. Refrigerate promptly the leftover tiramisu'!
...that is, if any left!

I could actually make this! I like this recipe because it doesn't have any alcohol in it. I don't like the flavor of the alcohol in the ones they serve at restaurants. I think your little taste testers did a good job too!
