Cannelloni is a large tube of pasta that is meant to be filled.
Most times we (Italians) stuff it with cooked ground beef and layer it with both marinara sauce and besciamella sauce.
This time I tried something different.
This has a caprese flavor to it.
This is such a great tasting meal, and so simple to make.
I used
three different kind of cheeses.
2 cups of cottage cheese
(can be substituted with ricotta cheese)
1 cup mozzarella cheese
1/2 cup Parmesan cheese
2 Tablespoons of Pesto
1 package of cannelloni
(or manicotti or big shells)
Pretty much any kind of pasta that can be stuffed!
Quick marinara sauce:
Heat up 2 Tablespoons of olive oil, 1 large can of crushed tomatoes, basil+garlic+salt. Cook for 5 minutes. You want to taste the freshness of the tomatoes.
Mix the cheeses with the pesto,
stuff the pasta
and layer them on a bed of fresh marinara sauce.
When done filling,
add more marinara sauce and cover with aluminum foil.
Bake at 350 for 1 hour.
Top with Parmesan cheese. Serve hot.

No wonder that it was all gone... looks delicious and it tastes delicious too such manicotti! Will certainly try this recipe. Hope you too had some lovely weather, we had 70s yesterday, for a change after much cold, windy and rainy weather.

Yum, yum, yum! I could definitely live in Italy with all of that good food. i bet eating something like that the night before one of your marathons would be a great source of energy too!

This looks delicious. Growing up my mom made manicotti for us all the time. I love that the cannelloni noodles don't have to be boiled before stuffing. This is something I could handle and would love to try for dinner one day. Thanks for sharing your recipe.
