Vegetarian Summer Sandwich

One thing I love about Summer is grilling.
And grilling vegetables is so easy, yet delicious.
This sandwich was made with grilled zucchini and eggplant.

you will find the secret to grill eggplant 
(same goes for the zucchini). 
Both veggies have a high content of water, so

 not always the easiest to grill.

For the sandwich you can pretty much use any bread and cheese that you like, 
although as far as cheese, 
I suggest you use a mild flavored one.
Today I used shredded mozzarella over the bread, that I melted in the toaster.
Sliced mozzarella or provolone would work well.

I layered both eggplant and zucchini previously cooked.
You can put it back in toaster or use a panini press.

My mouth is watering just looking at this sandwich! I never thought about grilling zucchini and eggplant. I love both of those veggies so this sandwich is right up my alley! I am definitely going to try this. Thanks for sharing! :)

That looks like a very healthy sandwich. I'm not a fan of eggplant though. I do like zucchini.

Looks so good! We love grilled zucchinis but I've never thought of adding them to my sandwich. Yum!

Daniela we grill eggplant, zucchini, and portabella mushrooms all the time. I like to marinate them in a bag with a little olive oil and balsamic vinager. Your sandwich looks mouth watering!!
