Roasted Pumpkin seeds

Do you make something just because it reminds you of someone in your life?
Roasted pumpkin seeds reminds me of my grandfather.
He relocated to Heaven about 7 years ago.
I remember growing up going to their house, and there he would be snacking on roasted pumpkin seeds.
I have to admit that I have not made these in quite a while, but a few days ago, while 

I was making my mom's recipe for pumpkin fries, I decided to clean the seeds and roast them.
It really is a very simple thing to do. 
Add a little salt and spray the pan with olive oil...and that's it.
As soon as they came out of the oven, the smell was just too good.

Those are for you Nonno!

What a sweet memory and I love Pumpkin Seeds. We always do them at Halloween time but I love the taste of them. Your Nonno would be so happy to see you thought of him.

I also make these whenever I use a squash of any kind, not just pumpkin. I have learned that it's not even necessary to clean them before baking. The stuff that clings to them just bakes off and disintegrates. Since discovering that, I make them all the time as it otherwise seemed like too much work. It's nice to do things that remind us of those who've "relocated".

I enjoy pumpkin seeds but I am the only one who does around here.

My grandmother believed that she showed her love through her baking. She had a recipe for sour cream bread that she altered for my boys when they were little. In one she added brickle pieces in the other mini M&Ms. Whenever she made a small loaf for my boys she also made a larger loaf of the regular recipe telling me they shouldn't have to share and this was for their friends, and me. So when she died I had to take over making the loaves. The first year I handed each boy their loaf only to find I gave them the wrong one when they both took one look and traded loaves. I think they liked that I got it wrong, it made my grandmother remembering which one got which all that more special.

Now I have heard of doing that, but must admit I've never done it and have never tasted them before. I bet they're good. Just don't tell your kids that if they eat them they'll sprout pumpkins in their tummies! LOL.

I love pumpkin seeds, but I usually don't think of them after Halloween. Nice treat to have in memory of your grandpa.

You made me choke back a bit... because you offer them to your dear Nonno!
How sweet such childhood memory. Yes we eat them a lot, however not home roasted. They are very healthy snacks and we mix them with other nuts and dried apricots and such.

Bless your heart! What a beautiful post. Our pumpkins served as food for the goats and chickens at my step son's ranch this year. NEXT year I will try to use them the way you did!

This is so sweet. I also love pumpkin seeds, but never make them. I think I'll have to, now. Nothing like the love of a Grandparent and Grandchild.
