Now that Fall is behind us...
or at least Fall decor...
what do you do with all those pumpkins laying around?
Most people don't think these big orange ones are good to eat...I will show you differently.
A few ideas,
cut in large cubes and freeze to use for later in soups.
(think of a wintery Minestrone soup)
Another favorite thing we do is
pumpkin fries.
At least that's what I call them.
I grew up eating this...it is a favorite family recipe.
The steps are simple, yet this makes a great vegetable side dish.
Fist of all
cut the pumpkin and cut the skin off.
Then cut the pumpkin in strips.
Dip the pumpkin slices in flour
(add a few shakes of salt each time you add more flour),
shake the excess flour off,
and layer them in a baking sheet previously oiled.
When done layering,
drizzle some olive oil over the pumpkin and shake a little salt over it.
Bake at 400°F for about 30-35min, or until crisp.
Eat hot...
YUM!!

Hmm, I use and freeze a ton of pumpkin but I've never thought of making fries. What an awesome and healthy idea! I need to try it!

I must live under a rock because I never knew you could cook pumpkin like that! Pretty neat idea. My only experience with pumpkin is good old fashioned pumpkin pie.
Now I want an oven. :-) I love this idea and since we have over 500 pie pumpkin seeds my granddaughter wants to plant next year I need all the ideas I can come up with to keep from getting bored of eating pumpkin.

I used to bake and then freeze the puree for making pumpkin bread and such. This year we donated all our pumpkins to a good cause! Louis Dean's son has a ranch complete with goats, chickens, you name it! They eat anything so we hauled all our pumpkins plus Amber's pumpkins down there! They loved them!!

I am now regretting that I tossed all my pumpkins...though, the squirrels did enjoy most of them :). Next year, I'll have to remember this brilliant suggestion.

This is a great idea. I have two big giant pumpkins left over and three baking pumpkins that we bought to cook and never did. I might need to try this.
