Chickpeas Pizza - Pizza di Ceci

When I think of comfort food,
chickpeas pizza comes to mind.
Although this is not a pizza as most people know.

This recipe is actually a traditional Italian recipe,
not a recent gluten free experiment...although it's definitely gluten free,
and could be used to replace the traditional pizza crust.

The great thing about this, is that you really only need 
chickpeas flour +
water, salt and olive oil.
There are no strange ingredients, 
no rising, 
no kneading.

Too good to be true?
Not so.

We eat chickpeas pizza as appetizer, 
with cold cuts and sometime cheese,
but the possibilities are endless.

So here is how to make it.


  • 1 part chickpea flour
  • 3 parts water
for filling a large cookie sheet, I used 1 cup flour to 3 cups of water
  • pinch of salt 
  • 1 tbs olive oil for greasing the pan
To serve:
  • freshly ground black pepper
  • extra Virgin olive oil
Directions:
Pour the water in a bowl and add chickpea flour slowly (I use a sifter). 

This will help avoiding lumps in the batter. When this is blended together add a pinch of salt.
This will be very liquid.
It's supposed to be this way,
don't be alarmed.
I let the mixture rest for 3-4 hours, but some only let it sit for 30min-1 hour.
My mom starts in the morning and let it sit until we are ready to make dinner.

Stir often while it's “resting”.
The flour will want to sit at the bottom of the bowl.
I give a couple of stirs as I remember.
Really easy and fast.

When you are ready,
heat the oven to 400°F.
Oil a pizza tray/cookie sheet with olive oil and pour in the batter.

It should cover the surface completely and it should be about ¼ of an inch thick but not more.
Bake in hot oven until golden brown and crispy on top, about 30 min.
Cut, slice and serve with salt and pepper.

We eat this with cold cuts, cheese or as is.

You can probably find chickpeas flour at some grocery stores,
I just buy the dry chickpeas and have a friend that has a Vitamix to grind the chickpeas for me.

Doing it this way,
I only pay about $1 for a lb or chickpeas flour,
which is enough to make at least 3 large cookie sheet pans of chickpeas pizza.

    We just got home from 6 days Arizona, we wanted to see the Hoover Dam Bypass Bridge that was still under construction in July of 2009 when we toured the Hoover Dam. Mind boggling to see! We also went to the Red Rocks in Sedona; another marvel of nature.

  6. This looks delicious. I use cp flour all the time as a vegetarian. I buy it at Indian grocers. They have so many different flours so reasonably priced. ie. millet cp, mung bean,brown rice etc.
