Pasta Sauce in 5 minutes

For the cook on the go,
this pasta sauce can be cooked and be ready while the pasta is actually cooking.
Having dinner on the table in less than 20min, prep and cooking time.
All you need is
1/2 onion sliced
1 bell pepper (red, orange or yellow are the sweetest)
1/2 pint cherry/grape tomatoes
1can of tomato sauce (not paste) in a can
salt and oregano to taste
(makes enough for a lb of dry pasta)

Coat the pan with olive oil and cook the onion for a minute, then add the bell pepper and the grape tomatoes.
Cook 5 minutes or so and then add the tomato sauce from the can.
Salt to taste and add some oregano.
If you like your veggies "soft", then
cook 5 more minutes.
The onion, pepper and tomatoes should be definitely tender at that point.
This can also be cook ahead of time (if that's how you roll), and reheated before adding it to the cooked pasta.

This is a great way to add veggies and flavor to any pasta.
***bell peppers and tomatoes were frozen when we had plenty. Freeze bell peppers sliced and grape tomatoes whole***

Stay Frugal,
Daniela

I have never made sauce this way. I will have to try it. It makes my mouth water just looking at it.

Good Afternoon Daniela, Do you know, I have never heard of grape tomatoes, when I looked at the photograph I thought they were some type of bean, so I re-read the recipe and realised they were grape tomatoes.
I would have to use chopped tomatoes for this recipe.
Thank you for such a quick recipe...we all need lots of those.
Best Wishes
Daphne
