Red Velvet Cookies

Oh my goodness, this will be a VERY tempting addiction.

I am sometime able to get cake mixes for almost free (think sales and coupons), so I start searching for a way to use them up (beside making a cake).
I found that you can make cookies from any cake mix.
So a few days ago I used this up, using a 

few different ingredients
This is something that even my children can help with.
Put the cake in a mixing bowl, add 2 eggs and 1/3 cup of oil. 

I like to use coconut oil in my baking, so that's what I used.
(for cooking other than sweets, I only use extra virgin olive oil)
Mix the ingredients with a wooden spoon, then use your hands to make a smooth cookie dough ball.
The mix makes about 25 to 30 cookies, depending on size.

Preheat oven to 350 and bake for about 12 minutes.
Let cool off, then sprinkle some powder sugar over them.
This cookies are SO yummy.

  2. I've never used a cake mix to make cookies before. I never knew you could do that. Those red velvet cookies look good. I bet those would be good during the holidays too.
