Oh my, our family loves almond butter
(minus the hubby).
Almond butter is one of those things that are easy and healthy for you...and it can be fairly inexpensive too.
I use 3 ingredients:
1cup of roasted almonds
2T of coconut oil
less than 1T of honey
The process is easy.
Roast the almonds in the oven for about 5-10 minutes (keep an eye on it to prevent burning).
Finely
grind 1 cup roasted almonds in a blender, then add 2T coconut oil and blend into a smooth paste (about a minute)
If you like it chunky, reduce the blender time.
Then I just add the honey and stir.
Store in an airtight container, for up to 2
weeks (no need to refrigerate).
The best price for organic, cold press coconut oil is at Costco (we buy it through a friend, since we don't have a membership). Also buying almonds in bulk is less expensive (I get mine from my parents almond trees).
For the honey, try to buy local.
I spread some almond butter on my whole wheat sandwich bread,
and this is a very satisfying snack.

Yum! I thought you needed some major equipment to do this. I love all these items. I've made pesto, and will try your recipe. I've never made alfredo in a blender! I'm definitely going to do the almond butter, too.

ReplyDeleteThis is probably the simplest recipe I've seen for this. I'm slowly but surely acquiring a like for nuts. Almonds are definitely my favorite.

ReplyDeleteSuch a clever way to make your own! We always buy ours at Trader Joe's but already a few times they did run out of them.
Almonds we buy bulk at Costco in bags; not from their 'nut' area but from the isle where you find baking products. It makes quite a difference in price. Are your Parents still living in Italy? The cold pressed coconut oil is another very healthy alternative for many uses. You are doing such a great job for your family in providing them with healthy food!
