Spinach Pasta

Do you ever wait at the last minute to decide what you are going to cook for dinner?
Well, I am a planner, but sometime it does happen to me too.
The good thing is that I can usually come up with something fast and easy.
Last night I used ricotta and spinach to create this delicious dish.
All you need is

1 box pasta
1 cup of ricotta
1 package frozen spinach (10-12oz)
couple of cloves of garlic

Cook the spinach in 2T of olive oil and garlic
for 5 minutes.
When done,turn the heat off and add the ricotta.
 In the meantime cook the pasta in water.
When draining the pasta, save at least 1cup of the cooking water.
Add ricotta and spinach to pasta, and add some of the hot cooking water if it seems too dry. (but sometime is not necessary)
Serve with Parmesan cheese.

***Ricotta is used more in the southern regions of Italy, 
and used in pasta dishes as well.***

  1. I'd love it! My guys who think cooked spinach is poison (Though they eat it raw--go figure) wouldn't eat it in a million years. Men!!

  5. Yum! You are always whipping up something good and healthy in the kitchen. I would love that I bet. Will probably wouldn't like the spinach in it though. I hope he'll eventually eat it since it's so good for you. His older brother (Cody) eats everything now, so there is still hope for Will. LOL!

  9. Yummy recipe, Dani. You're quite the chef. My last- minute-meals usually consist of something in the microwave. This looks like something from the Olive Garden. :)
