Chocolate Covered Almonds and Cranberries

Growing up, we had plenty of almonds...I remember picking the almonds in the hot sun, I remember the itchy feeling from the almond trees.
The thing is, almonds are good for you (pretty much like any other nut).
I am very blessed that when my parents come, they replenish my almond stash.
Here is a traditional recipe of Southern Italian chocolate covered almonds...with a spin.
Cranberries.
The ingredients of the chocolate covered almonds and cranberries are very simple: 10oz. chocolate
2c. almonds
1c. cranberries
See, recipes are usually pretty simple around here.

Dark chocolate is best, dark Swiss chocolate even better.
Toast the almonds in a 350 oven for 10-15 minutes.
Melt the chocolate in a "double boiler"...aka, 1 small pot with chocolate pieces over 1 large pot with boiling water.

When the chocolate is melted, 
add the toasted almonds and the cranberries.
Spoon it out onto a sheet of aluminum foil and let it cool. (you can put in the fridge to speed up the process)
Yum

A dessert that is good for you.

I am adding this to our New Year's Eve Menu.

  4. I KNOW that is scrumptious! Woe to me, the price of almonds is so outrageous here, lucky you to have your mom bring them to you. I can imagine the joy of picking almonds in warm sunshine. With the nasty weather we are having, doing anything in warm sunshine would be a joy to me!! (Well, maybe not picking cotton, which is not joyous, and is most certainly itchy!)

  5. That looks awesome!! Only thing stopping me from getting to it is I'd be the only one in the house to eat them. My guys won't touch cranberries, and I'm trying to lose weight, not gain it. :-)

  11. We had an almond tree growing up but I don't remember ever getting many almonds out of it. Boy would we have loved to have made these. Looks so good!

    Such a healthy snack indeed. With the big blocks of dark chocolate, from Trader Joe's this works perfect and for all of us without having access to fresh almonds, those bags at Costco are great, also their cranberries!
