Carrots with milk

I grew up eating carrots cooked in milk...ever heard of that? 
I am about to introduce you to this great veggie side!
what you need (aka Ingredients):
5-6 large carrots
2T butter
about 2 cups of milk
handful of parmesan cheese
salt and pepper to taste

Start with slicing the carrots
melt 2T of butter in the pan
add carrots and cover with milk (about 2cups or so)
bring to a boil, 
then turn down and let the carrots simmer for 20 minutes or until the milk "dries up" and looks like this. 
Take off the burner, add salt and pepper to taste and a handful of grated parmesan cheese...
Enjoy!

Carrots are great source of vitamin A, good for  an eagle eyesight and a great tan!
(even if I don't have an eagle eyesight, and definitely I have NO tan what-so-ever!)
And all the freckled people say Amen!

  6. Oh Joshua is soooo sweet! He has the most beautiful eyes. I can certainly relate to having freckles too! Tan? What's a tan? Ha! I've never seen carrots cooked that way. In fact, I'm sorry to say, I never cook carrots and serve them as a side. Bad me!! I do like baby carrots dipped in ranch dressing though. Does that count?
