This tomato sauce is the basic simple red sauce we use all the time.
One thing to remember is that to give your sauce "flavor", you must use this...
Odori...that is onion, carrot, and celery.
I usually put
1/2 onion
1 carrot
1 stalk of celery
(celery leaves are great to use for cooking)
But really, you could use more or less of the above.
Chop the odori,
cover the bottom of your pot with olive oil,
brown the chopped veggie in the oil and add the tomatoes from the can (1large, or 2 medium)
You can use crushed, puree, diced...according to the sauce consistency that you like.
Add salt to taste, bring to a boil, stir and let it simmer for at least 1 hour.
I usually double or triple this recipe, and freeze it for later.
ps dried onion is great for some things, but the fresh stuff always gives the best flavor...especially in this sauce.

ReplyDeleteA friend of mine that her husband is Italian gave me this recipe many years ago and it is wonderful! You are right, nothing like the fresh vegetables for great flavor. We also add a little red wine to the sauce while is simmering! LOL I love this sauce to make homemade lasagna!
