Give me a bowl of daily pasta with red sauce, and I am good to go!
But hot days like today, make me want to turn the stove (and oven) off until next fall!
This is a twist of what it is known as Insalata Caprese, the famous antipasto from the beautiful island of Capri, near Napoli.
(many compares antipasto to hors d'oeuvre, but
antipasto is served at the table and signifies the
official beginning of the Italian meal)
Anyway,
my friend Megan had mentioned she had made a Caprese grilled cheese, and this is how I made mine today.
mozzarella cheese
I was going to use the fresh mozzarella (which is the only mozzarella we use in Italy), but because it is more "wet", I was afraid that the bread would get soggy, defeating the purpose of eating a sandwich!
This is an easy, yet SO tasty and unique sandwich.
Spread the outer side of the bread with butter, and on the inside spread the red pesto.
Add mozzarella
Add mozzarella
Grill as you would a typical grilled cheese sandwich, and enjoy with a fresh salad!
This is faster, cheaper and healthier than a trip to your favorite Fast food.
Lunch is served!

OMG! That looks delicious! I am going to have to try that. I love grilled cheese sandwiches, but have never deviated away from the plain ones we feed our kids. This looks so easy and I'm sure tastes better too. Thanks for the recipe.
