Making your own jam is very easy.
I only use 3 ingredients...
4 if you count the water.
This jam does not require a water bath, and it only needs to be refrigerated once you open up the jar.
But not until then.
Read on.
The best part about making your own jam is that you know exactly what's in it, and you can customize it just as you like it.
This is a basic family recipe.
My grandfather was a farmer in southern Italy.
He died when I was 6 years old,
but luckily my father has passed down to us the farmer's way of growing and storing crops.
***this is a basic recipe for all kind of fruit. I will give some tips at the end of the recipe***
Today I made a small batch of blackberry jam.
We have been picking them every other day,
and we got more than we can eat.
Easy Blackberry Jam
3 cups of blackberries
1 cup of sugar
1 lemon
1 cup of water
Combine all of the above in a small pot.
Bring to a boil and simmer on medium-low
until water is reduced and it looks like a tick syrup.
This will take approximately 30 minutes.
Put the jam in a jar while it's hot,
close the lid and flip the jar upside down until completely cooled off.
I wait until the next morning.
In the morning, turn the jar right side up and check that the lid does not make a popping sound.
If that's the case, then the jar has not been sealed properly.
Put in the fridge and eat it first.
I have not had that problem yet.
My jars have always been sealed properly and good to be stored on a shelf.
Once you open the jar, then store in the fridge.
Now, the reason of putting the jar upside down while the content is hot, is so that there is not air gap between the lid and the jam.
Therefore the "vacuum seal" effect.
The reason behind the fresh lemon juice, is because it's a thickening agent.
Therefore, no pectin in our jam.
You will have to adjust the sugar according to your fruit.
The sweeter the fruit, the less sugar you will need.
As a rule of thumb, I use 3 part fruit to 1 part sugar.

***If you use anything other than sugar, you might want to try a small batch. I don't have experience with sugar substitutes in homemade jams***
