This is my very first gluten free recipe.
I must admit, our family does not have a gluten intolerance, but given that we have guests over on a weekly basis, I started to experiment with gluten free desserts, to make when we do have people over that are on a gluten free diet.
That said, these are so good, and with ingredients like coconut oil and brown rice flour, I feel good about feeding them to my family.
INGREDIENTS:
2 eggs
1/2 cup coconut oil
1 tsp
vanilla extract
3/4 cup sugar
1 1/2 cup brown rice flour (I grind my own)
1/2
cup cocoa powder
1 tsp baking soda
3.5 oz dark chocolate (100gr
bar)
Pinch of salt
DIRECTIONS:
Preheat oven to 350F.
In a safe microwave dish, over 45
second intervals and stirring the chocolate in between and set aside.
In a mixing bowl, add the eggs, sugar,
vanilla, coconut oil and mix until combine.
Then add the melted
chocolate and mix.
Add the brown rice flour, baking soda, salt and
cocoa powder.
When finished, scoop cookie batter on
baking sheets about 2 inches apart.
Made 22 cookies. Bake for 10
minutes.
Do not overcook.

As for the sugar I will substitute with Coconut sugar from Trader Joe's.
