One thing I love about Summer is grilling.
And grilling vegetables is so easy, yet delicious.
This sandwich was made with grilled zucchini and eggplant.

(same goes for the zucchini).
Both veggies have a high content of water, so
not always the easiest to grill.
For the sandwich you can pretty much use any bread and cheese that you like,
although as far as cheese,
I suggest you use a mild flavored one.
Today I used shredded mozzarella over the bread, that I melted in the toaster.
Sliced mozzarella or provolone would work well.
I layered both eggplant and zucchini previously cooked.
You can put it back in toaster or use a panini press.

ReplyDeleteDaniela we grill eggplant, zucchini, and portabella mushrooms all the time. I like to marinate them in a bag with a little olive oil and balsamic vinager. Your sandwich looks mouth watering!!

YUM! I love vegetarian sandwiches! one of my favorites is just garden fresh tomatoes, feta, balsamic vinaigrette some s & p and nosh! This one sounds amazing.
