I have been wanting to try this recipe for a while,
Uber berry muffins from BHG.
I did tweaked the recipe a little.
Ingredients
I used cranberries (instead of blueberries), coconut oil (instead of melted butter), and whole wheat flour (instead or white flour).
I was actually surprised that this recipe only called for 1/4c of sugar to 2 cups of flour.
Usually the amount of sugar called for, is way to much, and I always have to at least half the amount when I bake.
Since this recipe called for such a small amount, I kept it the same and loved it.
That said, I would suggest that if you are used to a sweeter taste, up the amount of sugar to a 1/2c to 3/4c.

My children did too.
Preheat oven to 400°F and bake for 15 minutes.

ReplyDeleteLooks and sounds really yummy. Oh, if we compare European recipes to the ones from the USA, the sugar is always a lot less than in this country.
We too use strictly whole wheat for everything, pancakes and all.
