Creamy Sweet Potato Soup

One of the (few) things I love about Winter (yes, it's still cold here),
is Soup Night.
There is just something about eating a bowl of hot soup with warm bread...
My children LOVE this soup.

4 lb. sweet potatoes 
(mix with regular potatoes if you like)
8 c. broth (chicken or vegetable)
1 c. half and half (or heavy cream)
Salt to taste


Peel potatoes and cube it.
Add broth, bring to a boil and then turn down to medium heat. 
Let it cook for 30 minutes.
puree in food processor.
Back in the pot, combine puree, half and half and salt to taste.
 And dinner is served.
Easy, warm, filling, frugal and delicious!

  7. I've never heard of sweet potato soup before! I've made and tried plain potato soup with cheese sprinkled on it, but never sweet potato soup. I bet that is good. I love sweet potatoes anyway. Thanks for sharing the recipe.
