Potatoes Lasagna

Let me tell you that my kitchen is smelling good already, and I have not baked this baby yet!
I am always looking for new recipes and this one is a twist of a classic. 
A couple of weeks ago I found some potatoes on sale at Aldi and I have been thinking of ways to use those up. Well, this is a great way to substitute noodles with potatoes, because of their nutritional values, but also because of their fiber content (makes you feel fuller longer).
Let's start, shall we.
5 large potatoes (about 2 lb)


Homemade Besciamella sauce (or a jar of Alfredo sauce)


1 jar of pasta sauce and shredded mozzarella cheese

Now the fun part! You can slice your potatoes 1/8-1/4 of an inch, or you could microwave it whole for 8 minutes if you want to reduce the baking time later to 55 min, and then slice it.
I decided to put mine in the microwave this time and then sliced it up.

Then just layer the ingredient as you would do with a traditional lasagna : potatoes, red sauce, white sauce and cheese, then repeat until your ingredients are gone 

(4 layers if you use a 9X13)

Bake 400 for 55 minutes. Add some bread and salad and you got a scrumptious dinner for under $6 for 6 large portions. That is $1 dinner per person that includes salad, bread and this yummy hot mess! (no tipping necessary)

  1. Dovro' provarlo! Ora che si mangia senza glutine il 90% delle volte (a meno che siamo a casa di altri/fuori- aiuta la digestione di Jman e anche il papa') le patate sarebbero molto meno care della lasagna senza glutine (di riso) :) Grazie per l'idea. Baci!
