Easy Guacamole

When I was pregnant with our second child, 
I craved guacamole...very unusual for me...



At that time I had never made guacamole before, 
nor have I ever bought it. 

Anyway, one Sunday after Church, I told RN to drop me off at the grocery store, so this pregnant mama could get some of that green stuff! 



I ended up buying several avocados.  
I was determined to make my own!
Now remember, I was pregnant, tired and craving guacamole.
I was NOT going to chop onions and tomatoes...then came the idea of using salsa. 

I mean, salsa has onions and tomatoes, right? 
So here is how I made guacamole over and over again.





If making it for a group, use 1 avocado (=1 cup mashed) for 2 servings/people.
(or 1 avocado for each pregnant lady!)

1 avocado
1 Tbsp of salsa
splash of lime juice
salt to taste

SMASH the avocado with a fork, 




add the salsa, lime and salt.


And there you have it!



I was one happy pregnant lady. 
I could make this special treat in a pinch, when I wanted it, and without letting the guacamole turn brown if left a day in the fridge.
This has been one of my favorite afternoon snacks ever since!

Today I bought 4 avocados for .49 cents each. Go get yours.

  2. That sure does look good! I'll be sure to show Jimmy this recipe. He just made guacamole for the first time the other day. It was ok, but I think he should've used some lime juice. It was missing that little "zing"! Thanks for sharing this quick and easy recipe.

  3. Right now I am eating avocados all the time. I love them with just a pinch of salt and crackers. That is what I had for lunch today. I am way past the age of being pg. I just love the 'green stuff' because it is tasty. I have been buying the super nice ones from Sam's club. Got 5 really pretty ones for $4.00 on Saturday. Your price is better. I will have to shop around.
